Open U (now called The Learning Annex): “The Physical Spa” - class designed to teach women physiology and nutrition principles.

Ed Watson speaking to the Rosevile Historical Society. He is pointing out how depletion rates of fat and carbohydrates vary according to exercise intensity level. Carbohydrate consumption soared during the 20th century - shortly after the flour milling industry adopted metal rods in place of crude stone in the late 1800’s - thus ending the stone ground milling era. The food industry introduced refined flours that are not only devoid of fiber and nutrients - but also packed a higher carbohydrate density (calories/grams in less space). Carb consumption increased while people depleted less carbs from their bodies because machines replaced the physical work done. The rest is history - diabetes, degeneration, and obesity result from excessive carbohydrate intake, not fat intake.
